If you love a good comforting meal that is cheap, healthy, and ridiculously simple to pull off, then this is your recipe (if you can even call it that). Not only does it smell up the house with an amazing aroma, but it tastes so satisfying after a long, cool fall day.
The nice thing about this recipe is you can add as much or as little of the ingredients of your choice so if you have little ones at your feet, you don’t need to pay attention to measurements amidst the chaos!
So fire up that trusty crockpot and throw in the following for at least 4 hours on high and tell everyone you slaved away the day in the kitchen pulling this off:
- 3 chicken breasts (I use frozen)
- 2-3 T. EVOO
- diced or baby carrots
- diced red or fingerling potatoes/sweet potato
- quartered onion
- whole garlic cloves
- fresh rosemary, tarragon & oregano (can sub for dried)
- about 1/2 cup chicken stock
- salt & pepper
Tip: I throw the chicken on last so I can season it with salt & pepper and EVOO to get a pretty lookin’ bird to eat. We do eat with our eyes first after all!
