Menu Plan

I must make a public apology for last week’s link to the recipe for Penne with Spinach Sauce. I made it, we tried it, and we regretted that one bite. It was bland, yet salty all at the same time. Odd. If you tried it and liked it…well, you weren’t alone. Sadie ate all of her portion plus some of ours without any complaint. That says a lot in her book, especially because it was green like a vegetable (gasp)!

I’m hoping the new recipes I try out are a bigger hit, rather than a disaster that calls for pulling out our trusty Quesadillas as the last ditch effort dinner back-up.

My goal is to spend $50 on groceries this week, utilizing things we already have on hand in the pantry/freezer and be able to put some of that $50 toward stocking up.

If gas prices have got you down and feeling blue (try out $4.09 for unleaded here in Orange County, California), attempt shopping in your pantry for one meal this week. I betcha you’d be surprised what you can dish up and your wallet will thank you for the breathing room!

Here’s our menu:

  1. Easy Baked Pasta & Salad
  2. Corn Soup
  3. Broccoli Rabe, Goat Cheese & Lemon Zest Pizza
  4. Carne Asada Burritos, Black Beans & Corn
  5. Tempura Chicken, Brown Rice & Green Beans
  6. Date Night
