Menu Plan

It’s still a hot one this week and for some odd reason, not one person in my life has offered the 3 month ritzy hotel stay with 24 hour room service to solve the problem! On top of that, my energy is really starting to slide as I enter my third trimester of pregnancy, so things in the kitchen have really simplified as a result. Bumming a dinner or two off of family is always helpful at this stage of the game, so we’re taking advantage with no shame! Sometimes simple is just good, even when it’s a necessity.

Here’s what we’re eating this week:

  1. Barbacoa Tacos & Salad (leftovers frozen from last week)
  2. Cream Cheese Crock Pot Chicken
  3. Quinoa Pasta & Roasted Broccoli
  4. Brinner (Breakfast for Dinner): Oatmeal Pancakes, Bacon & Eggs

  1. I love that you are doing Brinner because we do that almost every Thursday night. I don’t know what it is about Thursday but I run out of steam and we always have eggs and toast. Will you share the link/recipe for the Barbacoa Taco recipe you use?
