Menu Plan

Slowly we are finding a new norm and figuring out a new routine and schedule with a newborn and a new job with new hours. Can you tell there are a lot of “new” things to become acquainted with?! It makes for a crazy and chaotic house at times lately, but at least I’ve somehow had dinner on the table by the time TJ gets home every night this past week.

I’m looking forward to this week and our menu because it’s finally getting back to our “mostly vegetarian” way of eating.

Here’s what we’re eating this week:

  1. Wet Bean & Cheese Burritos & Salad
  2. Spaghetti with Garlic Breadcrumbs, Parsley & Lemon Juice
  3. Eggplant & Goat Cheese Sammies with Tomato Tarragon Sauce
  4. Brinner
  5. Chili & Cornbread
